I can't remember where I got this recipe from, but it's excellent.
Crawfish taste best, but if you can't find crawfish, shrimp will
work too.

Crawfish Etouffee

1 lb. cleaned crawfish tails
1 stick butter
1 large onion, chopped fine
2 ribs celery, chopped fine
1 medium bell pepper, chopped fine
As much minced garlic as your family can stand :)
1 recipe golden roux*
2 teaspoons salt
1/4 teaspoon red cayenne pepper or hot sauce to taste
1 teaspoon paprika
1/2 cup water
*Golden roux:
1/2 stick corn oil margarine
4 tablespoons flour

Saute' onions, celery, bell pepper and garlic in margarine; add salt
and paprika. Add golden roux*. Stir well until blended. Add crawfish
tails; cook ten minutes on medium-high heat, stirring often. Add
water and simmer 30 minutes. Add additional water if too thick.
Serve hot over rice. Serves 4.

*To make golden roux: Melt margarine in a skillet over low heat.
Blend in flour; cook until golden color, stirring constantly. Takes
about 15 minutes.
